Ginny Callan discovered the joys of country living when she moved from New York to Vermont to attend college. In 1976 Ginny and a friend opened the natural food sandwich company called "Mother's Best."

In the spring of 1977 Ginny Callan opened the Horn of the Moon Café in Montpelier, Vermont. The café served fresh baked breads from early morning opening till evening close. For lunch there were hot soups on cold days and salads made with locally grown organic vegetables on warm summer days. Because of the high quality of the cooking, the freshness of the ingredients, and the unique appeal of the recipes The Horn of the Moon Café quickly became one of Vermont's best known vegetarian restaurants.

In addition to running the popular vegetarian café, Ginny teaches cooking classes and is active in local politics.
